After finding out about this new chocolate wonderland, I was eager to see it with my own eyes. Madam Tam Luu Thi Thanh, wearing a typical Nón-hat made of palm leaves, is my guide here at the communal cocoa fermentation centre, located in Grand-Place, Vietnam. The legendary Mekong delta forms an ideal habitat for the Trinitario beans. It’s very rare to find all gifts of nature so wonderfully combined as here. Complex acids and a high level of cocoa butter form the ideal recipe for our “Vietnam 45%” milk chocolate bar. The newest member of our assortment is balanced with aromas of coffee, fudge and citrus.
